Foodie pal

Loved the treats my pal sent. Homemade cookies, soup mix, chocolate and pickles. And....she even hand wrote a recipe I asked for. So sweet!!!

Strawberry Cheescake Trifle

We were stationed in Guam for two LOOOONG years. What I did enjoy of it was the friends I made and the recipes I collected. This one was given to me by my friend Danielle. When I tasted it I had to have it!!!

So yeah, the pound cake is from my previous post which I made mainly to make this Trifle. I even went and picked the strawberries from a local farm

Strawberry Cheesecake Trifle

2 pints fresh strawberries, sliced            
1 c. sugar, divided
2 8oz. pkgs, cream cheese, softened     
3 tbs. orange juice
3 c, whipping cream, whipped
1 loaf 10 3/4oz. frozen pound cake. I used my homemade,
   cut into 1/2in. cubes.

In bowl, toss strawberries with 1/2 c. sugar; set aside. In another bowl beat cream cheese, O.J.
and remaining sugar until smooth. Fold in whipped cream. Drain strawberries set berries aside.
Place 1/2 cake in trifle dish or serving bowl. Top w/ 1/3 cheese mixture, 1/2 strawberries.
Repeat layers, cover and refrigerate for at least 4 hrs.

When using frozen strawberries just thaw and drain. ENJOY!!!

Pound Cake

Passing down recipes is something I think my whole family doesn't mind doing. I've ran into a couple people who will NOT give up a secret recipe. "REALLY" get over it! Your in luck though because I love recipes and I share!!! That's how my momma raised me:)

Ernest "my honey" gets excited when I make grannys POUND CAKE!!!! I have to save him a little batter in the bowl too.

Sour cream Pound Cake

2 sticks butter          3c. cake flour
1c. sour cream          1tsp. vanilla
6 eggs                     1/4tsp. soda
3c. sugar                 Pinch of salt

Cream sugar and butter. Add eggs, 2 at a time, beating after each.
Add remaining ingrediets. Bake in tube pan at 325* for about 1 1/2 hrs.

CrockPot Mac n Cheese


Ok so this is one of my recipes for mac n cheese. I have another that I do in the oven that is creamier but this is just as good. It frees up my oven and the CrockPot keeps it warm for a long period of time.

1 lb. Elbow Macaroni
1 lb. Extra sharp cheese
1 can evaporated milk
2 cups milk
2 eggs beaten
1 tsp. salt
1/2 tsp. black pepper
1 tsp. ground yellow mustard

I boil my noodles about 7min. because they will finish cooking in the crock pot.
Place noodles and all other ingredients in crock pot and cook about 2 hours.
I know its so easy but that's why I love it. Enjoy!!!

first desert 7 April 11

Caramel-Banana Ravioli

2 firm medium bananas
3 rolls (1.7oz. ea.) milk
chocolate-covered chewy
caramels, unwrapped
(24 pieces total)
2 pkg. (8oz. each) refrigerated
crescent rolls.
1 tbsp sugar
1/3 cup caramel sauce

Preheat oven to 400*F. Lightly brush cookie sheet with oil. Slice bananas diagonally into twenty-four
1/4-inch-thick slices. Cut caramels in half.
Unroll one package of dough onto bottom of pan, gently shaping to form a rectangle. (do not stretch)
Dough may not cover entire bottom of pan. Arrange banana slices over the dough in four rows
of six each, spacing 3/4in. apart. Top each banana slice with two caramel halves. Unroll remaining
dough directly over filling, matching edges and shaping to fit. Press around filling to seal; pinch
together any tears.
Using pizza cutter trim and discard edges of dough; cut into 24 ravioli. Separate and space them over pan.
Sprinkle sugar over ravioli.
Bake 10-12min. @ 400*F
Cool 2min. Drizzle with caramel sauce.

So I just made this for the first time. Hint- make sure the dough is good and cold.
Also I used rolo's and found them in a bag and they were tiny so I didn't
even have to cut them in half.

So this first one is something that my husband actually taught me. We got married 22 years ago and his grandmother use to make this for him.
          Hot Dog Delicious
          Package of favorite Hot Dogs
     small onion minced
  Tbls. oil
  pepper and/or hot sauce
  ketchup
 buns
Chop Hot Dogs and mince the onion. Place in frying pan and saute till onions are translucent and hot dogs are golded brown. Add Ketchup, enough to make a nice sauce. Add pepper and/or hot sauce to taste. Serve on buns. Enjoy!!
